A light, vegan soup that can be made ahead, this bisque is perfect for spring. The dill gives it an extra boost of flavor that helps to bring out the flavors of the squash, quinoa and onion.

 

To start this dish preheat your oven to 400 degrees Fahrenheit. Then cube your squash and cut up some onion. Saute the onions until they are cooked through then add in your zucchini cubes and saute them until they are soft.
